Hello friends. It’s the second day of Spring and we’ve had snow for two days in a row. But even though Spring is MIA, I’m creating spring at home with these pretty Pansy Topped Shortbread Sugar Cookies. Don’t forget to check out the rest of the yummy spring desserts at the end of this post.
Even though these look so beautiful, they are so easy to make and would look so beautiful at a brunch or any party.

I think the key to these is to not bake the cookies with the pansies. Instead, I used THIS method instead.
Cut the pansies from the stems. Or you can purchase food grade pansies which are sometimes found at groceries store in the herb isle.
Bake your favourite cookie recipe. (You can find mine HERE). Once baked, removed from oven and allow the cookies to cool a little bit.
While the cookies bake, follow the flower drying instructions from THIS POST. Please note that the temperature of microwaves vary and you must always monitor the flowers while in the microwave.
Use a brush and some egg white to brush onto the cookie. Stick the pansies onto the cookies and sprinkle with a little sugar.
These look so great! You can even purchase premade cookies and just add the pansies and a little sugar.
